About Poulet Moambe

Moambe or mwambe refers to the pulp pressed from boiled palm fruit. It is not palm oil: it is the whole flesh, thick and orange, and it gives the sauce its body as well as its colour.

Chicken is browned, then simmered in the pulp with onion, garlic, tomato and chilli. It is the dish that turns up at every occasion in Kinshasa and Brazzaville.

  • 500g chicken breast fillet
  • 200g peanuts (roasted and unsalted)
  • 2 large tomatoes, chopped
  • 1 onion, diced
  • 2 cloves garlic, chopped
  • 1 teaspoon paprika
  • 1 teaspoon chilli (to taste)
  • 2 tablespoons vegetable oil
  • Salt and pepper, to season
  • Water or stock, as needed

Tinned palm nut pulp, sold as sauce graine or noix de palme in African shops, is the authentic base; the recipe here uses ground peanuts, which makes it closer to a moambe d’arachide and is also traditional. Chicken thighs on the bone beat breast fillet.

Preparing the dish

Grind the peanuts to a paste and slacken it with warm water before it goes into the pot. Brown the chicken properly. Cook the tomato down until the oil separates before any liquid goes in.

Step-by-step instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the diced onions and chopped garlic and fry until golden brown.
  3. Add the chicken and brown it well on all sides.
  4. Stir in the chopped tomatoes and spices, and cook until the oil separates, about 8 minutes.
  5. Grind the peanuts and slacken the paste with warm water, then stir it in.
  6. Pour in enough water or stock to almost cover the chicken, then lower the heat.
  7. Simmer for about 30 minutes, stirring often, until the chicken is tender and the sauce thickens.
  8. Season with salt and pepper as needed and serve.

Gluten-free / lactose-free version

The dish contains no gluten and no dairy. Served with fufu or rice it is suitable throughout. Check a stock cube.

Tips for vegans and vegetarians

The palm or peanut sauce carries a vegan version well: aubergine, mushrooms or beans in place of chicken. Saka saka and pondu, both pounded cassava leaves, are the region’s established plant-based dishes.

Slacken the peanut or palm paste before it goes in. Stir often, because these sauces catch on the base of the pot readily. And let it reduce properly, since the sauce should coat the chicken rather than pool around it.

Real palm nut pulp makes mwambe proper. Smoked fish alongside the chicken adds depth. Okra thickens it further.
